The not-so-secret ingredient in our sour ales is our unique blend of wild yeasts, and microorganisms including brettanomyces, pediococcus, and lactobacillus which convert residual sugars left after fermentation to create a mildly acidic sour ale with an enticing sweet-tart balance on th enose and palate. Classic flanders red ale flavors and aromas with earthy, oakey notes and estery phenols laid over a rich malty base. After discovering sour beers during a trip to Belgium in 2003, we create our own micro-cellar in an old vault in the cellar at our brewpub in downtown Ann Arbor by inoculating 4 used wine barrels with our favorite Belgian gueuze. From this initial inocuation, we have developed a unique micro-bacterial environment that converts the residual sugars in our fully fermented beers into classic sour flanders red and brown flavors. This award-winning sour red ale is made by conditioning our Jackhammer Old Ale for a year in inoculated oak barrels before bottle or cask-conditioning for an additional three months. The result is a high-gravity, medium-bodied ale with a richly complex palate bursting with juicy sweet-tart fruit flavors with the perfect balance of acidity and dryness for a sophisticated brew that drinks like a fine wine. Pair with ginger stilton or other sharp or earthy cheeses, roasted meats and wild game. Or enjoy on its own as an aperitif.
